Muffins are a fun food to make because there are so many types and lots of flavor to play with. The biggest part of making any muffin is knowing what the dough should look like when made properly. With time and practice you should know this by looking at it or “by eye”. The truth is if they don't come out properly the chances are your dough wasn't thick enough.
