Blueberry Muffins


Blueberry muffins are the worlds favorites! In many cases we can remember these wonderful delights baking in the early mornings in many of our kitchens not so much today. Why? Many of us don’t have the time to work it into our daily schedule and we are forced to have to buy the store bought ones we see in our neighborhood grocery stores. However this is not a great nutritional option, while it makes our day a little less hectic it often contains ingredients that are not a healthy choice for our children and families. However many kitchens can have these great delights with a little less time than they remember and a little better health choice than they have on the grocery store shelf.


With the use of the ingredients listed below you can have healthy blueberry muffins without all the processed sugar, processed fat, and high calories. These ingredients give you only 130 calories per muffin compared to the 450 in your average coffee shop.




  • ¼ cup almond flour
  • 1 tsp baking powder
  • 1 cup whole wheat pastry flour
  • ¾ cup all purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups fresh blueberries
  • 2 eggs
  • 11/4 cups 1% butermilk
  • ½ cup brown sugar
  • 1tbp orange juice
  • 6 tbp canola oil
  • ½ tsp vanilla


Cranberry Orange Muffins


For many generations we have relied on cranberries as a source to keep us regular but they have other benefits as well. Apart from their great taste we can rely on the great fruit of cranberries too  help us improve our immune system, help with the digestive system and improve our fiber intake. Cranberries are highest in antioxidants than any other vegetable or fruit only out done by the Blueberry.


Below are the ingredients for these great muffins they will keep you regular and healthy each and every day!




  • 1 Cup boiling water
  • 1 ¼ cup white whole wheat flour
  • 1 cup dried cranberries ( or Fresh)
  • 1 tbp cornstarch
  • ¼ cup all purpose flour
  • ¾ cups almond flour
  • ¾ cup granulated sugar
  • ½ tsp salt
  • 1 ½ tsp baking powder
  • 2 tbp agave nectar ( or honey)
  • 1 egg yolk
  • 2 egg whites
  • 2/3 cup Canola Oil
  • ½ cup low-fat Greek yogurt
  • 2 tbp Orange Zest
