Looking for an easy breakfast recipe full of protein and veggies? Savory Breakfast Muffins are perfectly portioned and pack plenty of energy for early risers. Make a batch on the weekend and freeze for a quick, healthy breakfast to reheat in the microwave on busy weekday mornings. Add other veggies like spinach, grated carrots, or chopped tomatoes for even more nutritional punch.






  • Six large eggs
  • ¼ cup heavy whipping cream
  • ¼ cup diced green bell pepper
  • ¼ cup diced onion
  • ½ cup grated or shredded cheddar cheese
  • ½ cup pre-cooked diced ham, browned sausage, or crumbled bacon
  • ½ teaspoon salt
  • ½ teaspoon black pepper



Step 1: Preheat oven to 400 degrees Fahrenheit.


Step 2: Beat eggs on medium for thirty seconds or until combined and frothy.


Step 3: Add heavy whipping cream and beat for an additional thirty seconds.


Step 4: Add salt and pepper, diced green bell pepper, diced onion, cheese, and breakfast meat to egg mixture. Mix for ten seconds.


Step 5: Place a standard or shaped silicone muffin pan onto a baking sheet for stability. Fill each section halfway.


Step 6: Bake in a preheated 400 degree oven for 20 -25 minutes or until edges just begin to brown.



 Step 7: Using a butter knife, carefully slide Savory Breakfast Muffins out of silicone muffin pan. Serve immediately.


Step 8: To freeze muffins, remove from silicone muffin pan and allow to cool completely. Individually wrap muffins with wax paper and aluminum foil or place in a zip-top freezer bag. To reheat, place on a microwave safe plate and microwave for 20-30 seconds.
