  • 1 ¼ cup. flour
  •  1 ¼ cup sugar
  •  ¾ cup butter, softened
  •  3 eggs, lightly beaten
  •  ½ tsp. vanilla
  •  1 tsp. baking powder
  •  2 TBSP. cocoa powder


Rocky Road Filling


  • 2 oz. semi sweet chocolate
  • 1 oz. glazed red cherries
  • ½ cup chopped nuts
  • 2 cups pink and white marshmallows, chopped into smaller pieces




  • 2 oz. melting chocolate




Preheat your oven to 350 degrees F. Prepare a baking pan with 12 paper cupcake liners. Place softened butter and sugar into a bowl and cream together well (about 2 minutes). Add in beaten eggs a little at a time, beating slowly between each addition. Add vanilla. Sift in flour, baking powder and cocoa and mix together for another minute. Spoon batter into prepared pan approximately 2/3 full. Place the pan in the middle rack of your oven and bake for approximately 18-20 minutes or until a toothpick inserted comes out clean. Remove the pan from the oven and let sit for a few minutes before removing the cupcakes from the tins and placing them on a wire rack to cool.


To make the filling: In a small bowl melt chocolate over hot water (or use a double boiler). Add the chopped cherries, nuts and marshmallows. Mix to combine. Cut a small hole in the center of each cupcake and dig out with a spoon. Discard the center and fill hole with rocky road filling piled high in the center. Melt remaining chocolate over hot water (or in a double boiler) and then drizzle this melted chocolate over the filling.

Be sure to choose 100% BPA-free products made from 100% pure food grade silicone. Cheaper brands often use plastic fillers. Fillers can compromise the quality and durability of silicone. You can test this yourself by doing the “pinch and twist” test. Just twist a bit of the silicone, if it turns whitish, it’s got plastic fillers. Pure silicone will retain its color. Forget about the nightmare cleaning your muffin pan. Silicone bakeware is much easier to clean than traditional metal or aluminum bakeware.
