Delicious cake recipe using rhubarb!
Ingredients:
- 1 1/4 c. brown sugar
- 1/2 c. oil
- 1 egg
- 2 tsp. vanilla
- 1 c. buttermilk
- 1 1/2 c. rhubarb, diced
- 1/2 c. walnuts
- 2 1/2 c. flour
- 1 tsp. baking powder
- 1/2 tsp. salt
Instructions:
Combine egg, oil, baking powder, salt and sugar. Add milk, vanilla, flour and rhubarb. Stir good, put in 9 x 13 inch pan.
Take 1/4 cup sugar, 1 teaspoon cinnamon and 1 teaspoon melted butter and sprinkle over batter.
Bake 35 minutes at 350 degrees.
