Ingredients For Donuts:

  • 1/2 pumpkin puree (or baked sweet potato)*
  • 3/4 cup whole wheat flour minus 1 tbsp
  • 1 tsp vanilla extract
  • 1 tsp liquid sweetener of choice
  • 1 tsp baking powder
  • 1tbsp olive oil
  • 1tbsp baking cocoa
  • optional 1 tsp apple cider vinegar (optional but highly recommended)

 

Ingredients For Glaze:

  • 1/4 cup plain greek yogurt
  • 1 tsp vanilla extract
  • almond milk
  • optional sweetener, to taste

 

*f00d tips: for an extra fluffy donut, add 1 egg + apple cider vinegar and reduce pumpkin to 1/4 cup

**f00d tips: for a vegan version, replace greek yogurt with vegan/dairy free yogurt

 

Instructions:

1) Combine dry ingredients first and mix well. Add dry to wet and mix until a dough forms.

Use your hands to fully incorporate all of the ingredients until a dough forms.

2) Pinch off pieces of the dough and form into donuts. If dough is too sticky, form into balls on

the plate, and press finger in the center to form a hole for the donut. Microwave on a large

plate for 2-3 minutes or until fully cooked. Set aside to let cool.

3) In a small bowl, combine ingredients to make the glaze. Add milk a little at a time until

glaze becomes smooth and creamy.

4) Dip tops of donuts in the glaze then enjoy!
