Another delicious red velvet cupcakes with cream cheese icing recipe. Enjoy!

 

Cupcake Ingredients:

  • 12 TBSP. butter
  • 1 ¾ cup sugar
  • 3 ¼ cup flour
  • 1 ½ cups milk
  • 1 tsp. salt
  • 2 eggs
  • 4 TBSP. red food coloring
  • 1 tsp. vanilla
  • 2 ½ TBSP. cocoa powder
  • 1 ½ tsp. baking soda
  • 1 ½ tsp. apple cider vinegar

 

Icing Ingredients:

  • 6 oz. cream cheese
  • ½ cup butter
  • 4 cups sugar
  • ¼ tsp. vanilla

 

Instructions:

Preheat over to 415 degrees F. Beat butter and sugar together until well creamy and smooth. Add in eggs and red food coloring and mix together. In a separate bowl, mix together flour, salt, and cocoa. Add dry ingredient to butter mixture alternately with milk. Add in vanilla. Mix baking soda and cider vinegar together and all to batter. Mix together, but do not overmix. Spoon batter into prepared cupcake liners. Bake for 18-20 minutes. Cool cupcakes before frosting.

 

Icing:

Add all ingredients into a mixing bowl and mix at medium speed until smooth. Spread icing on cupcakes, using a knife or pastry bag.
