Time for another classic: pumpkin cupcakes.

Ingredients:

  • 2 ½ cups flour
  • 1 TBSP. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • ½ tsp. salt
  • ½ tsp. nutmeg
  • ½ tsp. ginger
  • 3 eggs
  • 1 cup brown sugar
  • 1/3 cup vegetable oil
  • ½ cup orange juice
  • 1 tsp. vanilla
  • 1 ½ cups pumpkin purée

 

Instructions:

In a large bowl, sift together flour, baking powder, baking soda and spices. In another bowl, beat together eggs, brown sugar, oil, orange juice and vanilla at medium speed of an electric mixer for two minutes. Stir in pumpkin purée. Fold liquid mixture into dry ingredients until just blended. Spoon batter into cupcake liners, filling ½ full. Bake at 350degrees F. for 30-35 minutes. Remove from oven and set on rack to cool. Frost with cream cheese/orange icing.

 

Cream Cheese/Orange Icing:

  • 1 TBSP. butter
  • 3 – 4 cups icing sugar
  • ¼ cup cream cheese at room temperature
  • ½ tsp. vanilla
  • Juice of ½ an orange
  • 1 tsp. grated orange rind

 

Mix together butter, cream cheese, vanilla, orange juice and orange rind. Gradually beat in icing sugar until required frosting consistency is achieved.
