Fun recipe! Kids love this!




  • 2 ¼ cups all-purpose flour
  • 1 1/3 cups sugar
  • 3 tsp. baking powder
  • ½ tsp. salt
  • ½ cup shortening
  • 1 cup milk
  • 1 ¼ tsp. vanilla
  • 2 eggs



Preheat over to 350degrees F. Prepare muffin pan. Spray muffin holes lightly with vegetable spray. Insert paper cupcake liners. In a large mixing bowl, combine flour, sugar, salt and baking powder. In a separate bowl, cream together shortening, milk and vanilla. Add to dry ingredients. Beat together with mixer on medium for one minute, scraping the sides of the bowl often. Add in eggs. Beat for another minute. Scrape bowl again and beat at high speed for about 2 minutes, until well mixed together. Fill cupcake liners ½ to 2/3 full. Bake for 20 to 25 minutes, until cake tester comes out clean.


Pink Snow:

  • 1 pkg. Strawberry or Cherry Jello crystals
  • 1 cup boiling water
  • 1 cup cold water
  • ½ cup whipping cream
  • 1 TBSP. icing sugar
  • Coconut


Dissolve Jello crystals in boiling water and add cold water. Refrigerate until partly set. Beat 1/2 cup whipping cream with 1 TBSP. icing sugar until soft peaks form.  When cupcakes are cold, cut in half horizontally and sandwich back together with cream in the center. Place a cupcake on a slotted spoon and spoon partly set jello over the cupcake. Roll cupcakes carefully in coconut.  Refrigerate for about 30 minutes until set.
