Sour Cream-Peach Muffins



  • ½ cup butter
  • 1 cup sugar
  • 2 large eggs
  • 1 1/2 tsp. vanilla
  • ½ tsp. salt
  • 1 2/3 cup flour
  • 1 1/2 tsp. baking powder
  • 3 large peaches, peeled and thinly sliced (you can use canned peaches packed in water)



Preheat oven to 350 degrees F. Place cupcake liners in pan. Beat butter and sugar in a mixing bowl with electric mixer until light and fluffy. Beat in eggs, one at a time, beating well after each addition. In another bowl combine the flour, baking powder, and salt. Slowly beat the dry ingredients into the creamed mixture until well blended. Spread the batter into prepared cupcake pans. Slice the peaches and arrange over the batter, pressing lightly, overlapping as needed so that the top of the cupcake is well covered with peach slices. Sprinkle topping (below) over the peaches and bake for 20 minutes or until cupcakes are golden brown and the peaches are soft.



  • 1/3 cup flour
  • 4 TBSP. brown sugar
  • 3 TBSP. butter
  • 1 tsp. cinnamon


Combine the topping ingredients together and mix until crumbly.
