Another one of my favourite cupcake recipes!




  • 1 can peaches, drained but reserving syrup
  • ¼ cup brown sugar
  • 1 TBSP. butter
  • 1 ¾ cups flour
  • 3 tsp. baking soda
  • ¾ tsp. salt
  • ½ cup shortening
  • ½ cup sugar
  • 1 egg
  • 1 ½ tsp. vanilla
  • ¼ cup milk
  • ½ cup reserved peach syrup



Dice canned peaches into small dice. In a small saucepan, melt butter. Add peaches and brown sugar. Simmer together until peaches are soft and syrupy. Cool slightly. Spoon peach mixture into the bottom of prepared cupcake cups.


Make the cupcake batter: Stir flour, baking soda and salt together. Cream shortening and gradually add the sugar, creaming together well. Add the egg and vanilla and beat until light and fluffy. Mix together milk and peach syrup. Mix in dry ingredients alternately with milk mixture. Spoon batter over peach mixture in cupcake cups. Bake at 350degrees F for 20 – 25 minutes. Top cooled cupcakes with vanilla frosting, or as desired.
