Delious fresh tasting orange cupcakes withan orange icing.




  • 1-3/4 flour
  • 2 TBSP. corn starch
  • 1 cup sugar
  • ½ tsp. salt
  • 2 ½ tsp. baking powder
  • 2 eggs, separated, whites beaten until stiff
  • 1 tsp. vanilla
  • ½ orange juice
  • Grated rind of ½ orange
  • 1 cup butter, softened



Combine butter, sugar, egg yolks, and vanilla in a large mixing bowl. Cream ingredients together thoroughly. Mix flour, salt, and baking powder together in a separate mixing bowl. Add dry ingredients to creamed ingredients 1/3 at a time to the creamed mixture, alternating with orange juice. Stir in grated orange rind. Beat egg whites until stiff. Fold in beaten egg whites gently. Spoon batter into cupcake liners, about half full. Bake in a 350degrees F. oven for 15 minutes or until a toothpick inserted in center comes out clean. Remove from oven and cool cupcakes completely before frosting. Frost with Orange Icing.


Orange Icing

  • 1 ½ cups icing sugar
  • 1/8 tsp. salt
  • 1 TBSP. grated orange rind
  • 3 TBSP. butter, softened
  • 3 TBSP. orange juice


Using an electric mixer, mix all ingredients together starting with only 2 tablespoons of the orange juice.  If frosting is too thick then add the additional tablespoon of orange juice.
