Ideal cupcake recipe for coffee lovers!
- 2 TBSP. instant coffee powder
- 6 TBSP. butter
- ½ CUP sugar
- 1 TBSP. honey
- ¾ cup water
- 2 cup flour
- 2 TBSP. cocoa powder
- 1 tsp. baking soda
- 3 TBSP. milk
- 1 egg, lightly beaten
Preheat oven to 350 degrees F. Line cupcake pans with cupcake paper liners. Put the coffee powder, butter, sugar, honey and water in a saucepan and heat gently, stirring, until the sugar has dissolved. Bring to boiling, then reduce the heat and simmer for 5 minutes.
Pour into a large bowl and cool to room temperature. Sift in the flour and cocoa. Dissolve the baking soda in the milk and add to the mixture with the egg and beat until smooth. Spoon the mixture into prepared cupcake pans. Bake for 15-20 minutes or until a toothpick inserted in the center of the cupcake comes out clean. Transfer to a wire rack to cool. Frost as desired.
