- 2 ¼ c. whole wheat flour
- 1/3 c. millet
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 c. buttermilk
- 1 egg, lightly beaten
- ½ c. olive oil
- ½ c. honey
1. Preheat oven to 400 degrees F. Grease muffin tin and set aside.
2. In a large bowl combine whole wheat flour, millet flour, baking powder, baking soda and salt. Set aside.
3. In another bowl combine buttermilk, egg, olive oil, and honey. Add to flour mixture and combine until just moist.
4. Fill muffin tins until 2/3 of the way full. Bake 15 to 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
