Time for something special: maple cream cupcakes!




  • 2 cups flour
  • 3 tsp. baking powder
  • ½ tsp. salt
  • ½ cup shortening
  • 1 ¼ cups sugar
  • 2 eggs
  • 1 tsp. maple flavoring
  • 1 cup milk



Stir flour, baking powder and salt together in a bowl. In another bowl, cream shortening, adding in sugar gradually, beating well between additions. Beat in eggs one at a time. Stir in maple flavoring. Add dry ingredients alternately with milk, beginning and ending with dry ingredients. Blend together well. Scoop batter into prepared cupcake cups. Bake at 350degrees F for 20-25 minutes. Frost with Maple Frosting.   Makes 2 dozen medium sized cupcakes.


Maple Frosting:

  • ¾ cup maple syrup, heated
  • 1/8 tsp. cream of tartar
  • 2 tsp. sugar
  • 1 egg white, unbeaten


Combine hot maple syrup, cream of tartar and sugar in top part of a double boiler. Place over boiling water and add unbeaten egg white. Beat with an electric mixer until thick and smooth enough to use as a frosting. Remove from heat and frost cupcakes immediately.
