Great summer cupcake recipe using lemons.




  • 1 cup flour
  • 2 tsp. baking powder
  • ½ tsp. salt
  • ½ cup sugar
  • ½ cup milk
  • ¼ cup melted butter
  • 1 egg
  • Grated rind of one lemon
  •  Juice of one lemon
  • ¼ cup sugar



In a large bowl, stir together dry ingredients. Add in grated lemon rind. In another bowl, add melted butter to beaten egg and milk. Beat together with an electric mixer. Add liquid ingredients to dry, a little at a time. Stir together only to moisten.


Fill cupcake liners ½ full. Bake at 375degrees F for 15-20 minutes. Remove from oven. In small bowl or cup blend together the sugar and lemon juice. While cupcakes at still warm, spoon lemon/sugar mixture over top for a glaze.
