Cupcakes full of flavor, mmmm…

Ingredients:

  • 2 cups flour
  • 1 ½ cups sugar
  • ½ tsp. salt
  • ½ cup milk
  • ½ cup vegetable shortening
  • 1 ½ tsp. vanilla
  • 7 eggs, separated
  • 1 TBSP. grated rind of a lime
  • Juice of ½ a lime (about ¼ cup)

 

Instructions:

Preheat oven to 350degrees F. Line cupcake pans with paper liners. Combine flour, sugar, baking powder, and salt in a large mixing bowl. Add in shortening, milk, and vanilla. Add in lime rind and juice. Beat 7 egg yolks in a separate bowl, and add to other ingredients. Mix with mixer at medium speed scraping bowl often until well blended. In another clean large bowl, combine egg whites and cream of tartar. Mix at high speed 2 to 2-1/2 minutes or until egg whites are stiff. Add egg white mixture into batter, folding gently until just blended. Fill cupcake liners 2/3 full with batter. Bake for 20-25 minutes or until top springs back when touched lightly. Cool cupcakes completely in pans then top with key lime glaze.

 

Key Lime Glaze:

Combine 1 cup powdered sugar and 1 tablespoon melted butter in a small mixing bowl. Stir in 2-3 TBSP. of lime juice until slightly thin glaze consistency is reached. Drizzle over key lime cupcakes.
