I just love berries! Great cupcake recipe.


  • ½ cup butter
  • 1/3 cup plus 2 TBSP. sugar
  • Pinch of salt
  • 1 egg
  • 1 ¼ cups flour
  • 1/3 cup whole wheat flour
  • 1 tsp. baking powder
  • 4 TBSP. apple juice



  • 2 cups macerated fruit, like strawberries, raspberries, blackberries
  • 2 TBSP. sugar
  • 1 TBSP. corn starch
  • 1 tsp. rum
  • ½ tsp. vanilla extract
  • 1/3 cup apple juice or other berry juice

Preheat oven to 350 degrees F. Beat butter, sugar and salt together until creamy. In another bowl, mix the flours and baking powder together. Lightly beat the egg and juice together. Stir the flour mixture into the creamed butter mixture alternately with the juice and egg. Mix well, but do not over-beat. Spoon batter into prepared cupcake pans, lined with paper cupcake liners. Bake for 30-35 minutes. Clean and dry berries, and cut into pieces. Lightly mash the berries. Mix the sugar and corn starch in a small saucepan. Stir in the vanilla, rum and apple juice. Add a little water, if necessary, until smooth. Bring to a boil and cook until it starts to thicken. Add the berries and spoon over the top of the cupcakes, allowing the glaze to run down the sides a little. When cool, top with a vanilla cream frosting.
