The summer is winding down and it is going to be fall soon. For those of us who love the summer recipes it is coming to a close but there are a few muffin recipes you should try for your Saturday morning brunches. After all it is the end of the summer.

Summer Berry Muffins:

 

These muffins are a great summer treat. Made with summer berries, they contain anti-oxidants to help you fight of summer colds, and build the immune system for the cold winter months. They have blueberries which have the highest level of anti-oxidants and raspberries which contain vitamin c to help you strengthen your immune health.

 

Ingredients:

 

  • ½ cup whole – wheat flour
  • 1/3 cup white flour
  • ¾ cup mixed fresh berries
  • 2 tbs margarine
  • 1tbs baking powder
  • 1 pinch salt
  • ¼ cup brown sugar
  • 1 egg
  • 1 cup milk

 

 

Peach Muffins:

 

These wonderful end of the season treats not only help your health now but also prepare you for the upcoming seasons. These seasonal fruits share some common health benefits such as fighting heart disease and cancer. In addition they also serve as an anti-oxidant that will prepare you for the upcoming seasons. With all the vitamins jam packed into these little fruits like vitamins A, C, and E. And minerals like calcium, iron, and magnesium just to name a few you can’t go wrong.

 

Ingredients:

 

  • ½ cup butter (room temp.)
  • 2 eggs
  • 2 cups chopped peaches
  • 11/4 cups sugar
  • 1 ½ cups buttermilk
  • 4 cups flour
  • ¼ cup ground peaches
  • 4 tsp. Baking powder
  • 1 tsp salt
  • ¼ tsp ground cinnamon
  • 4 tbs. Cold Butter
