Probably one of the easiest cupcake recipes. Get creative with the topping!

Ingredients:

  • 2 ¼ cups all-purpose flour
  • 1 1/3 cups sugar
  • 3 tsp. baking powder
  • ½ tsp. salt
  • ½ cup shortening
  • 1 cup milk
  • 1 ¼ tsp. vanilla
  • 2 eggs

 

Instructions:

Preheat over to 350degrees F. Prepare muffin pan. Spray muffin holes lightly with vegetable spray. Insert paper cupcake liners. In a large mixing bowl, combine flour, sugar, salt and baking powder. In a separate bowl, cream together shortening, milk and vanilla. Add to dry ingredients. Beat together with mixer on medium for one minute, scraping the sides of the bowl often. Add in eggs. Beat for another minute. Scrape bowl again and beat at high speed for about 2 minutes, until well mixed together. Fill cupcake liners ½ to 2/3 full. Bake for 20 to 25 minutes, until cake tester comes out clean. Cool before topping with your desired frosting.

 
Be sure to choose 100% BPA-free products made from 100% pure food grade silicone. Cheaper brands often use plastic fillers. Fillers can compromise the quality and durability of silicone. You can test this yourself by doing the “pinch and twist” test. Just twist a bit of the silicone, if it turns whitish, it’s got plastic fillers. Pure silicone will retain its color.
