- 1 white cake mix
- 3 eggs
- 1/3 cup oil
- 3/4 cup concentrated frozen pink lemonade (thawed)
- 1/2 cup water
- 2 cups whipping cream
- 1/4 cup sugar
- 1 tsp vanilla
- 1/4 cup concentrated frozen pink lemonade (thawed)
- 1 TBSP. meringue powder
- Red food coloring
Preheat oven according to cake mix package directions. Lightly coat cupcake cups with nonstick cooking spray or use paper cupcake liners Mix cake mix with eggs, oil, water, and lemonade. Pour into cupcake liners. Bake as directed on the cake mix package.

For topping: whip cream with sugar, vanilla, meringue powder and a little red food coloring to make it pink. Slowly pour in lemonade. Whip until thick. Pipe onto cooled cupcakes.
