Great cupcake recipe using apples and cinnamon.




  • 2 medium apples
  • ¼ cup brown sugar
  • 1 tsp. cinnamon
  • 1 TBSP. butter
  • 1 ¾ cups flour
  • 3 tsp. baking soda
  • ¾ tsp. salt
  • ½ cup shortening
  • 1 cup sugar
  • 1 egg
  • 1 ½ tsp. vanilla
  • ¾ cup milk
  • cinnamon



Dice apples into small dice. In a small saucepan, melt butter. Add apples, brown sugar and cinnamon. Simmer together until apples are soft. Cool slightly. Spoon apple mixture into the bottom of prepared cupcake cups.


Make the cupcake batter: Stir flour, baking soda and salt together. Cream shortening and gradually add the sugar, creaming together well. Add the egg and vanilla and beat until light and fluffy. Mix in dry ingredients alternately with milk. Spoon batter over apple mixture in cupcake cups. Bake at 350degrees F for 20 – 25 minutes. Top cooled cupcakes with vanilla frosting and sprinkle with small dusting of cinnamon.
