Cupcakes with a very fresh tasting orange coconut frosting.



Cupcake Ingredients:

  • 1 cup (8-10) egg whites, room temperature
  • 1 teaspoon cream of tartar
  • 1 1/4 cups sugar
  • 1 cup cake flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 teaspoon almond extract


Cupcake Instructions:

Preheat oven to 350 degrees F. In large bowl, beat egg whites and add cream of tartar. Continue to beat until stiff. Beat in sugar. Sift flour and salt together and sift into egg whites. Fold together gently. Fold in vanilla and almond extract. Spoon mixture into ungreased cupcake pan. Bake about 25-30 minutes or until top of cake springs back when pressed. Sides of cake should just be starting to pull away from pan. Cool cupcakes completely. Using thin knife or spatula, loosen cupcakes and release from pan.


Orange Coconut Frosting

  • 1 1/2 cups sugar
  • 2 egg whites
  • 5 tablespoons orange juice
  • Dash of salt
  • 1/2 cup shredded coconut


Frosting Instructions:

Place sugar, egg whites, orange juice and salt in top of double boiler or saucepan that can be placed over larger pan of boiling water. Bring water to a boil. Using electric mixer, beat egg-white mixture until stiff peaks form. This will take at least 7 minutes. Remove top pan from heat and continue to beat until mixture is thick enough to spread. Fold in coconut or sprinkle it over cupcakes after frosting.
