Cinnamon muffins really are a delightful and delicious way to start any morning! The basic muffins are created using a standard muffin recipe, and are covered with decadent cinnamon sugar for a special treat. They are generally so straightforward that you can prepare them for weekday breakfasts, surprise brunches, or even just a snack.
Ingredients list:
- 2 eggs
- 3 c. flour
- 1 c. milk
- 1 c. sugar
- 5 Tbsp butter
- 5 Tbsp shortening
- 3 Tbsp baking powder
- 1 tsp salt
- 1/2 tsp nutmeg
- 1 c. melted butter
- 1 c. sugar
- 1 Tbsp cinnamon
Instructions:
- Preheat oven to 350 degrees F.
- In large bowl combine butter, shortening and 1 c. sugar. Cream until smooth. Beat in eggs, salt, nutmeg, and baking powder.
- Slowly stir in flour and milk alternately until mixture is just combined, and still lumpy.
- Fill muffin cups to the top, and bake for 20 minutes.
- Cool for 10-15 minutes.
- In small bowl combine 1 c. sugar and 1 Tbsp cinnamon. Brush each muffin with melted butter and top with cinnamon sugar.
