Chocolate Zucchini Cupcakes

Another delicious chocolate cupcake recipe. Enjoy!




  • ¼ cup oil
  • ½ cup sugar
  • 2 eggs
  • 1 ¼ cups zucchini, grated finely
  • ½ cup powdered milk
  • 2 cups flour
  • 1 tsp. vanilla
  • 1 tsp. cinnamon
  • 1 TBSP. baking powder
  • 1 square chocolate, melted



Cream sugar and oil together. Beat in eggs and grated zucchini. Add in melted chocolate and vanilla.   In another bowl, stir together flour and other dry ingredients. Add dry mixture to liquid mixture. Fill cupcake liners 2/3 full. Bake at 350degrees F. for 20-25 minutes, until toothpick inserted in cupcakes comes out clean. Cool cupcakes completely before frosting. Frost as desired. (Good with orange frosting or cream cheese frosting.)
