Delicious donut recipe with carrots and an interesting glaze!



Ingredients For Donuts:

  • 1/2 cup pumpkin (or baked sweet potato)
  • 3/4 cup whole wheat flour*
  • 1 tsp vanilla
  • 1 tbsp olive oil
  • 1 tsp liquid sweetener of choice
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • pinch nutmeg, cloves, and allspice
  • 1/4 cup shredded carrot


Ingredients For Glaze:

  • 1/4 cup plain greek yogurt
  • sprinkle cinnamon
  • 1 tsp vanilla
  • almond milk


F00d tip 1: Can be made gluten free with a combo of 3/4 cup gf oats and 1-2 tbsp coconut flour

F00d tip 2: For a vegan version, replace greek yogurt with a vegan/dairy free yogurt




Combine all ingredients and mix well! Use your hands to fully incorporate all of the ingredients until a dough forms.


Pinch off pieces of dough, roll out into a thin rope, and form into a donut. Repeat with rest of dough. Microwave 1min30sec (or until fully cooked).


Let cool.

In a small bowl, combine ingredients to make glaze and spoon on top of donuts.




PS You can also use a donut pan to bake these donuts!
