Another yummy cupcake recipe with caramels!
- ½ cup white chocolate, coarsely chopped
- ½ cup butter, cut into pieces
- 2/3 cup brown sugar
- ¼ cup golden syrup
- 1/3 cup milk
- 1 cup flour
- 1/3 cup self-rising flour
- 1 egg, lightly beaten
- 12 individually wrapped caramels
Preheat oven to 350degrees F. Prepare pan with cupcake liners. Combine white chocolate, butter, sugar, syrup and milk in a pot. Stir together over low heat until melted and combined. Remove from heat and set aside to cool for 15 minutes. Sift flours together in a bowl. Mix flours into liquid mixture. Stir in beaten egg. Spoon batter into cupcake liners. Unwrap caramels and push one caramel into the centre of each cupcake. (You should have 12 cupcakes.) Bake for 25-30 minutes. Remove from oven and cool before frosting, as desired.
