Delicious cupcake recipe with a Tia Maria frosting. Yummy!




  • 2 cups flour
  • 1 TBSP. baking powder
  • ½ cup sugar
  • 1 ripe banana, mashed
  • 3 TBSP. canola oil
  • 1 egg, slightly beaten
  • ½ cup warm milk
  • 1 TBSP. instant coffee powder
  • ½ cup warm milk
  • 1 TBSP. cocoa powder
  • 1 tsp. vanilla



Sift flour and baking powder together in a large bowl. Add sugar and mashed banana. In another bowl, combine oil and egg. Add instant coffee powder to ½ cup of warm milk and stir until coffee is dissolved. Add cocoa powder to the other ½ cups of warm milk and stir until dissolved. Add both milk mixtures to oil/egg mixture and then add vanilla. Beat together. Add liquid ingredients to dry ingredients, stirring until combined. (Do not overmix.) Spoon batter into cupcake liners filling 2/3 full. Bake at 375degrees F. for 20-25 minutes. Cool and frost with Tia Maria frosting.


Tia Maria Frosting:

  • 3 TBSP. Tia Maria liqueur
  • 1 TBSP. butter
  • 3 TBSP. light cream
  • 3 – 4 cups icing sugar


Mix first three ingredients together. Gradually add icing sugar and beat until spreading consistency is achieved.
