Banana Cupcakes with Peanut Butter Icing

I just love cupcakes with bananas! What about you?




  • ½ cup shortening
  • 1 tsp. vanilla
  • 1 cup sugar
  • 2 eggs
  • 2 ¼ cups flour
  • ½ tsp. baking soda
  • ½ tsp. salt
  • 1 ½ tsp. baking powder
  • 2 bananas, mashed
  • ¼ cup milk
  • 1 TBSP. butter



In a medium bowl, cream shortening and sugar together. Add vanilla and mashed banana. In another bowl, add all the dry ingredients together. In a measuring cup, add the butter to the milk and microwave for 45 seconds, until butter is melted. Add dry ingredients to creamed mixture, alternately with milk to form batter. Spoon batter into cupcake cups. Bake at 350degrees F for 20 – 25 minutes. Cool cupcakes and frost with Peanut Butter Icing.


Peanut Butter Icing

  • ½ cup butter (room temperature)
  • 1 cup smooth peanut butter
  • 2 cups powdered (icing) sugar
  • 4 TBSP. milk
  • 1 tsp. vanilla


Combine all ingredients in a bowl. Beat together with an electric mixture until smooth. Add more milk, if needed, to form a good spreading consistency.
