Delicious cupcake recipe using bananas and coconut.




  • ¾ cup butter, melted
  • 2/3 cup white sugar
  • 2/3 cup brown sugar
  • 2 tsp. baking powder
  • ½ tsp. salt
  • 1 egg
  • 1 cup mashed banana
  • 1 tsp. vanilla
  • 2 cups flour
  • 1 cup sweetened shredded coconut
  • Chocolate sprinkles



Prepare cupcake pan with liners. Preheat oven to 350degrees F. In food processor, mash bananas. Add in flour, sugars, baking powder, salt, egg, melted butter and vanilla. Process until smooth. Stir in coconut. Spoon batter in prepared cupcake liners, filling 2/3 full. Sprinkle tops with chocolate sprinkles. Bake for 20-25 minutes.
