Delicious paleo breakfast muffin recipe!
- 1 lb ground chorizo
- 8 eggs
- 3 oz water
- 2 tbsp coconut oil
- *optional- 1½ cup diced vegetables
- *optional (not paleo) ½ cup shredded cheddar cheese
In a large pan, brown chorizo until cooked thoroughly.
While chorizo is cooking, generously grease muffin pan with cononut oil.
Optional- add onions, asparagus, broccoli, bell peppers or other veggie and brown with chorizo.
Add browned chorizo into muffin pans.
In a large bowl, whisk eggs and water until fluffy and slightly foamy.
Pour eggs into muffin tins.
Bake at 350 for 15 minutes or until completely cooked through (a toothpick inserted in the middle of the muffin will come out without runny egg).
Optional- halfway through add shredded cheddar cheese.
