Delicious low carb breakfast muffin recipe!



  • 3 eggs
  • 4 egg whites
  • 1 cup of freshly sauteed spinach
  • 1/2 cup shredded mozerella cheese
  • 1/4 cup shredded parmesean cheese
  • 1 Tbsp skim milk
  • optional add ins:  ham, turkey or chicken
  • salt & pepper to taste



Preheat oven to 375 degrees and prepare your muffin tins.


Whisk eggs and milk together and seasoning.


Add in the cheese and spinach.


Pour mixture to the top of muffin cups.


Bake for approximately 15 minutes, or until egg is done in the center.
