A mocha glaze gives these donuts a special delicious taste!



Ingredients fort Donuts:

– 1/2 cup pumpkin puree (or baked sweet potato)*

– 3/4 cup whole wheat flour minus 1 tbsp

– 1 tsp vanilla extract

– 1 tsp liquid sweetener

– 1 tsp baking powder

– 1tbsp olive oil

– 1tbsp baking cocoa

– optional 1/4 cup shredded zucchini


Ingredients for Glaze:

– 1/4 cup plain Greek yogurt

– 1 tsp instant coffee grounds

– splash milk of choice

– chocolate of choice, melted

* Tip: For extra fluffy donuts, add in 1 egg and reduce pumpkin to 1/4 cup

** Tips: to keep it vegan, sub vegan/dairy free yogurt in place of the greek yogurt and use a vegan/dairy free chocolate like enjoy life



1) Combine dry ingredients first then add in wet. Mix well until a dough forms. Use your hands to fully incorporate all of the ingredients until a dough forms

2) Pinch off pieces of dough and form into donut shapes. Arrange on a large plate and microwave 2-3 minutes or until fully cooked. Set aside to cool.

3) In a small bowl, combine first 3 ingredients and mix well until smooth and creamy. Dip tops of donuts in mixture and set aside. In another small bowl, melt chocolate and drizzle

on top.
