  • Cardamom is an intense, flavorful, smoky spice commonly used in Indian and Nordic cooking and baking. In these muffins, the cardamom is balanced by the whole wheat pastry flour and the fruits, but its flavor still shines through. These cardamom blueberry muffins have a complex flavor, sweet and spicy and thoroughly grown-up.   Plus, with no butter and whole wheat flour, they’re about as healthy as a muffin can be. If you don’t have whole wheat pastry flour, use half pastry and half whole wheat, or half all-purpose and half whole wheat, or just all-purpose. If using the latter two options, increase the amount of yogurt slightly. Your batter should be pretty thick, but not to the point that it won’t eventually slide off mixing spoon if you hold it up.   • These muffins were originally scones, and it shows in the crumbly, layered texture. Part of the coarse crumble comes from the whole wheat flour, of course. There’s just enough whole wheat to make you feel virtuous (practically saintly!) but not enough to make the muffin too dense.   The heavy cream adds a decadent rich flavor to what seems like a healthy muffin, and the ricotta infuses it with a moistness that makes the kneading a trial and makes the eating a delight. And the blackberries, which are crushed and muddled into the dough, add a summery kick and give your muffins a gorgeous color!     Previously, we talked about the most common types of flour: all-purpose, pastry, cake, and bread flours. However, there’s a whole world of flours still to be discussed! Non-wheat flours have become much more available in recent years due to increased awareness about Celiac’s Disease and gluten sensitivity, and so have recipes featuring these non-wheat flours.   For many recipes, the gluten is necessary to cohere the bread/cookie/cake together, so these gluten-free flours can’t always be used as direct substitutes. A better bet is to create (or buy) a blend that uses a gluten-free flour and thickeners such as cornstarch or tapioca starch.   • An under-represented denizen of muffin pans is the popover. Popovers look a bit like topsy-turvy muffins, with a very different (but equally delicious!) taste. A perfect popover has a light, crisp crust and a soft, tender interior.  It's rather like a very light, airy roll with a hollow center. Although some may question the appeal of a hollow roll, it's the hole in the center that really makes the popover shine.   The hollow center traps warm air and keeps the dough around it moist and flavorful. When you break it open, that steam rushes out in a wave of bready goodness, and the remaining warmth inside melts your butter almost immediately.
